Ingredients for the Chicken:
- 4 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups breadcrumbs (you can use panko for extra crispiness)
- 1/2 cup grated Parmesan cheese
- 1/2 cup mozzarella cheese, shredded
- Vegetable oil, for frying
Ingredients for the Tomato Sauce:
- 1 can (28 oz) crushed tomatoes
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
For Assembling:
- 1 cup mozzarella cheese, shredded
- Fresh basil or parsley, for garnish (optional)
- Cooked spaghetti or your choice of pasta
Instructions:
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and black pepper.
- Set up a breading station:
- Place the flour in one shallow dish.
- Place beaten eggs in another.
- Place a mixture of breadcrumbs, Parmesan cheese, and shredded mozzarella cheese in a third dish.
- Dredge each chicken breast in the flour, shaking off the excess.
- Dip it into the beaten eggs, allowing any excess to drip off.
- Coat it with the breadcrumb mixture, pressing the breadcrumbs onto the chicken to adhere.
- In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat.
- Once the oil is hot, add the breaded chicken breasts and cook for about 3-4 minutes per side, or until they are golden brown and cooked through. Place them on a paper towel-lined plate to drain excess oil.
- In the same skillet, add minced garlic and cook for about 30 seconds.
- Add the crushed tomatoes, dried basil, dried oregano, salt, and black pepper. Simmer for about 10-15 minutes, or until the sauce thickens.
- Spread a small amount of tomato sauce on the bottom of a baking dish.
- Place the cooked chicken breasts in the baking dish.
- Top each chicken breast with a generous spoonful of tomato sauce and a sprinkle of mozzarella cheese.
- Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
- Serve your Chicken Parmesan over cooked spaghetti or your choice of pasta.
- Garnish with grated Parmesan cheese and fresh basil or parsley, if desired.
- Enjoy your homemade Chicken Parmesan, a comforting and satisfying Italian-American classic!
